- still mineral water

- lemon juice (drink) (1)

- amaretto (1)
180 ml
- cane sugar syrup (1)

Preparation
- Separate the egg white from the yolk.
- In a shaker, pour the Amaretto, lemon juice, cane sugar syrup and egg white.
- Shake vigorously for about 10 seconds without ice cubes (dry shake) to emulsify the egg white.
- Add ice cubes to the shaker and shake again for 20 to 30 seconds until the mixture is very cold.
- Strain the mixture into two old-fashioned glasses filled with ice cubes.
- Garnish with a lemon zest.
